Veganize me: A 30-day Vegan Challenge

Our food choices have dramatic consequences not only for or own health, but equally for the external environment in which we live. By reducing our consumption of animal-based products, one can drastically reduce his or her carbon footprint and make a positive impact towards creating a better and healthier environment for ourselves and our future generations.

When it comes to global warming, farmed animals and their byproducts are responsible for over 32 billion tons of carbon dioxide annually. This amounts to over 50% percent of human-caused gas emissions.

According to World Watch: "Animal agriculture is responsible for many of the world’s most serious environmental problems including global warming, water use and pollution, energy consumption, deforestation, loss of biodiversity and species, as well as the detrimental impact fishing has on our oceans". It seems therefore, that a plant-based diet, or more inclusion thereof, is from an ecological standpoint, an ideal choice.

What this really means is that we can each make minor changes in our daily life-style to contribute towards creating a healthier environment for us all.

While I have not declared myself into any type of dietary category, about 80 percent of my diet is plant based, and most often when I speak to friend and colleagues about incorporating a more plant-based foods into their diets, I hear how difficult it is, or how boring it is, or how complicated it is.

So, as a tiny way to inspire and motivate those who are so inclined to incorporating  less animal products and more plant-based foods,  I invite you to join me along this "veganize-me journey". I shall post 30 delicious "vegan" plant-based culinary creations for you to try and hope that you will be inspired!.
